Hives throughout New Zealand

In the early spring, the honey of the North Honeycomb is ready for harvest. Honey collects nectar from nearby flowers, stores it in the hive, and then carries out a unique process, together with the wings to dehumidify the nectar, gradually reducing the moisture content of the nectar from 80% to about 20%, thus brewing the honey we know. Then, the bees seal the hive with beeswax, and the anti-fermentation effect of this natural preservation method can last for hundreds of years.
